Italian Bread (baguette style) – Recipe

I have been looking for a good recipe for Italian bread (baguette style). I have been experimenting with many recipes and finally came down to this one. It is simple to make and delicious to eat. If you do not have a bread maker, just use a mixer and then knead the dough. Dan Locaputo shared his Italian bread recipe with me, and it was quite sophisticated. I cut down on a number of the procedures and ingredients to fit my personal tastes (I also set up the recipe for a bread maker). But I owe Dan a big thanks for getting me started on Italian bread making.
Ingredients (2 loaves):
- 1 package (0.25 oz) dry active yeast
- 1 1/3 cups warm water (between 110 and 115 degrees F)
- 4 cups unbleached all-purpose flour
- 1 tablespoon light brown sugar
- 1 ½ teaspoons salt
- 1 ½ teaspoons extra virgin olive oil
- Cornmeal
Preparation:
In the bread maker, mix the warm water and yeast thoroughly and let stand about 5 minutes until it is creamy .
Place the flour, sugar, olive oil, and salt in with the yeast mixture in this order and turn the breadmaker on to mix and knead the dough (about 15 minutes).

On a cutting board or lightly floured surface, cut the dough in half. With your hands roll the bread out into a long baguette about 12 to 14 inches. Do the same with the other half of the dough. Sprinkel cornmeal onto a cooking sheet and move both loaves to the sheet. Cover with a damp cool towel and let stand for 45 minutes (until the dough has doubled in size approximately).

Preheat the oven to 375 degrees F. Cut a thin line along the top of each loaf with a serrated knife and cook for 35 minutes (until bread sounds hollow when tapped). Some like to mix an egg white with a tablespoon of water and coat the top of the loaves 30 minutes into the cooking. But I don’t like the taste and do not recommend this.

Here are my favorite sweetbread recipes:
Hawaiian Bread
3/4 cups pineapple juice
1 tablespoon butter, softened
2 1/3 cups bread flour
1/2 teaspoon salt
1 1/2 tablespoons brown sugar
2 tablespoons shredded carrots
1/4 cup flaked, shredded coconut
1/2 cup crushed pineapple
1/3 cup chopped macadamia nuts
2 teaspoons yeast
1/2 teaspoon cinnamon
Drain the pineapple well. Juice may be substituted for up to 2/3 of the water. May use regular milk or water/dry milk for pineapple juice.
Put all ingredients into pan in order recommended for your machine. Select light crust, sweet bread.
Espresso Bread
3/4 cup water lukewarm
3 1/4 cups white bread flour
1/4 cup sugar
1 teaspoon salt
1/4 cup heavy cream
3 tablespoons instant espresso
1 tablespoon pure vanilla
1/4 cup vanilla yogurt fat free
1 3/4 teaspoons active dry yeast
Add ingredients according to bread machine manufacturer’s instructions. (I added mine like this; water, sugar, cream, yogurt, vanilla, salt, espresso, flour, and yeast.)
select regular crust setting, bread type-basic.
Makes a 1.5 pound loaf.
Caramel Apple and Pecan Bread (the kids love this one)
1 C. water
2 T. butter, softened
3 C. bread flour
1/4 C. packed brown sugar
3/4 t. ground cinnamon
1 t. salt
2 t. bread machine or quick active dry yeast
1/2 C. chopped unpeeled crisp, tart or slightly tart apple (Granny Smith is best with this)
1/3 C. coarsely chopped pecans, toasted
Select sweet or basic/white cycle. Use light crust color. Add apple and pecans at the raisin/nut signal. Do not use delay cycles. Remove baked bread from pan and cool on wire rack.
For Dinner Breads:
Dinner Rolls
1 c. water
2 T. butter or margarine, softened
1 egg
3 1/4 c. bread flour
1/4 c. sugar
1 t. salt
3 t. active dry yeast
Measure carefully, placing all ingredients in bread machine in order recommended by manufacturer. Select Dough/Manual cycle. Do not use delay cycle. When cycle is complete remove dough from pan with lightly floured hands. Cover and let rest 10 minutes on lightly floured surface. Grease large cookie sheet. Divide dough into 15 equal pieces. Shape each piece into a ball. Place 2 inches apart on cookie sheet. Cover and let rise in warm place 30 to 40 minutes or until double. Dough is ready if indentation remains when touched. Heat oven to 375 degrees. Bake 12 to 15 minutes or until golden brown. Brush tops with melted butter. Serve warm or cool on wire rack.
NOTES: If you like rolls that are golden on top but have soft sides, place the rolls close together on the cookie sheet so they will rise and bake together.

Today I saw a bargain…and bought my first bread making machine! I donĀ“t want to end up like the rest of my family who appear to have put theirs in the loft! Any suggestions on good recipes or tips on using this ….”useful piece of equipment”…trying to convince my husband our life is now complete with one!!!!
