Corn Meal Will Stretch Meat Dishes

High on the list of foods that are plentiful, wholesome and inexpensive, is cornmeal. Pried mush, lathered with butter and syrup, a dessert which many of us may recall from childhood days, should make a place for itself again on the family bill of fare.

Lamb Platter With Fried Mush

1/2 teaspoons salt
1 teaspoon paprika
2 lbs. lamb shoulder, boned and cut in small pieces
2 tablespoons vegetable shortening
3/4 cup chili sauce
2 medium onions, chopped
10 stuffed olives, sliced
1 cup hot water
2 tablespoons flour
1/4 cup cold water

Sprinkle salt and paprika over meat and brown.in hot fat in skillet. Add chili sauce, onions, olives, and hot water and blend. Bring to boil and simmer 1 hour, or until meat is tender. Blend flour and water; add gradually to meat mixture and blend well. Let boil 2  minutes. Serve in platter surrounded with fried cornmeal mush. Garnish with parsley. Serves 6.

Fried Cornmeal Mush

3 cups hot water
1 cup corn meal
3/2 teaspoons salt
1 cup cold water
1/2 cup vegetable shortening

Heat water to boiling in top of double boiler over direct heat. Mix cornmeal and salt. Add cold water and blend. Add corn meal mixture to boiling water gradually, stirring constantly. Continue cooking and stirring until mixture is slightly thickened (about5minutes). Place over boiling water, cover, and cook 30 minutes longer, stirring occasionally. Pour into loaf pan, about 9×5x3-inches, and chill until firm. Remove from pan, cut into 1/2-inch slices, dip in flour, and fry in hot fat until golden brown on both sides.

Hot Tamale Pie

1/2 cup cornmeal
3/2 cups water
1/2 teaspoon salt
3/2 cups irradiated evaporated milk
1 small onion
1 tablespoon fat
2 cups left-over beef cut fine
3/2 cups canned tomato
1/2 teaspoon salt
Pepper

Measure meal into heavy saucepan. Add water and V2 teaspoon salt. Boil until mixture begins to thicken, then add milk and continue boiling 8 to 10 minutes, stirring constantly. Chop onion and cook slowly in fat until yellow. Add meat, tomatoes and Va teaspoon salt and pepper to taste. Turn filling into baking dish that has been greased and lined with 1/2 of the mush. Cover with remainder of mush, and bake in moderate oven (375 degrees F.) 45 minutes. Serves 6.

can you use corn flour in a cake?

simple recipe…
suggests self-raising but wanting to no wat will happen if i use corn flour…??

Bad things.
Corn flour doesn’t produce gluten, so you won’t have any structure to your cake. It will just crumble and fall apart. Thats why even cornbread has some wheat flour in it usually.
Also, the corn flour doesn’t dissolve smoothly in water. So your cake would have a gritty texture, not at all pleasing.

Then, the self-rising part of the equation. Self-rising flour already has the leavening mixed in with it, so if the recipe calls for it, then it’s based off of the proportions found in the self rising.

So I would stick with the self-rising. Or you could use plain white flour, and add in about 2 tsp of baking powder (for a single cake).

I only have just less then a cup of graham wafer crumbs, is there anything I can add to it to make enough….?

Can’t get to the store as I have no vehicle right now and wanted to make a cheese cake for when my hubby comes home tonight.

corn starch
animal crackers
there might be some other types of cookies there like Oreo’s(like a little bag of 100 calories) and possibly chocolate chip(100 cal mini bag) but not sure as we usually don’t have bought cookies.
also a bag of chocolate chip cookie mix that you add water and butter to, to make cookies.

Crush the animal crackers and mix it with what you have. They are closest to graham crackers out of your list.
I have used crushed several different types of cookies to make quick crust before.
Oreos make a good crust to..but it depends on what your making.You night not want chocolate in this reciep. Your call ..
I have a tip for future use. There is a wonderful crust you can make from flour butter and nuts. Mostly used for under pudding desserts or cream cheese desserts cause the nuts have to be toasted and then the whole thing browned. Takes about 15 minutes. BThen you pour your cold mix on it and refrigerate.. It is scrumptious!!!! I’ll show you and tell you how.. YOu must try it sometime..
