Healthy Wheat Germ Lemon Squares

I am a diabetic so I have to watch what I eat.  I also have other health problems that I have to be aware of.  But I love sweets and desserts.  And I don’t intend to live without them.  Maybe you, too, have health problems or perhaps you just promised yourself or your doctor that will try to improve your diet.  Give these delicious Wheat Germ Lemon Squares a try.  You’ll be glad you did!

WHEAT GERM LEMON SQUARES

Crust:

1 cup flour

3/4 cup wheat germ

1/2 cup “fake” powdered sugar*

1/3 cup butter, softened

Filling:

1 1/2 cups Splenda

1/2 cup sugar

1 tsp baking powder

4 eggs

1/2 cup fresh lemon juice

1 3/4 tsps grated lemon peel

“Fake” powdered sugar*

Heat oven to 350 degrees. 

Lightly spray bottom of a 9 x 13-inch baking pan sprayed with non-stick cooking spray.  Combine crust ingredients in a large bowl.  Mix with electric mixer on low speed until well blended.  Mixture will be crumbly.  Press crumbs firmly onto bottom of pan.  Bake 15 minutes at 350 degrees.

To make filling, combine Splenda and sugar well in a large bowl.  Add flour and baking powder and mix well.  Add eggs and blend well.  Gently stir in lemon juice and peel.  Carefully pour over the hot crust.  Bake 25 to 30 minutes or until the edges are a light golden brown and the filling is set.  Cool completely.  Sprinkle with powdered sugar and cut into squares.

*To make “fake” powdered sugar:

  • Put 3/4 cup of Splenda Granular and 2 tablespoons cornstarch in a blender and blend until it is a very fine powder.  0 grams of sugar and only 4 carbs per tablespoon.

    What rat treat recipes do u have?

    well i think that my rats are very bored of eating their normal food and i give them cereal but then they get bored of that and i want a rat treat that they will love for almost ever and it cant have any nuts cuz im allergic and i want it to be simple no wheat germ or kelp flour or any stuff that is hard to find at the store just normal household stuff.
    I also want to be able to make/bake it

    This is soooooo simple. Forget the yogurt drops – they’re nothing but sugar – the ultimate rodent junk food. What are you having for dinner tonight? Give them some! They love chicken, especially a nice chicken leg with the bone (yes, you read that right!). Some brown rice would be nice, but if you only have white, I doubt they’d complain. Now what veggie are you having with your dinner? Mine love ‘em all – cooked or raw. No raw beans, no onions, and you should be ok.

    What would I need to add to white flour in order to make it as healthy as whole wheat flour?

    I have a little white flour that I need to finish and my mom doesn’t like to use white flour; so I wondered: if I add some wheat germ would it be the same? Or would I need to buy some wheat gluten too?

    Many recipes you can use half and half. Save the flour to add with the whole wheat flour next time you bake.
