
how to make flour from corn(maize) to baking purpose?If you know please reply me?
Im trying to replace wheat flour with maize or corn flour for biscuit making.
I use polenta.
It is the only kind of corn meal I can easily get where I live.
It is quite coarse.
I can only replace part of the flour in a recipe with it; otherwise the bread/biscuits are too crumbly.
You have to experiment to get the right proportions.
If you are trying to eliminate wheat then you should also look at rice flour and other alternatives.
