
Need help with a gluten free baking recipe?
I’m going to be making gluten free Pumpkin Chocolate Chip bars today. This is the first time I’ve ever made a gluten free dessert (I’ve been on a gluten free diet since summer). The recipe doesn’t call for Xanthan gum but someone told me that if I don’t use xanthan gum then the bars won’t turn out the way there supposed to. So I’m trying to figure out how much xanthan gum I’m supposed to use so thats my question? Here is the recipe:
2 cups all purpose flour (I’m using Bob’s Red Mill)
1 T. pumpkin pie spice
1 tsp. baking soda
3/4 tsp. salt
1 cup unsalted butter
1 cup sugar
1 large egg
2 tsp. vanilla extract
1 cup canned pumpkin puree
12 oz. semisweet chocolate chips
So how much xanthan gum would I need to use for this recipe?
My best guess would be to try 1- 1.5 teaspoons of xanthum gum. I looked on the Red Mill site for something similar and only saw one pumpkin oatmeal recipe. My best advice is to try it with one and see how it turns out. Unfortunately gluten free baking is still a matter of trial and error (and you get to eat the mistakes) so keep track of how it turns out and what needs to be done differently. Good luck!!
